Stir Fried Chicken with Bok Choy


Ingredients: For Marination


1. Chicken breasts 2


Cut into small pieces


2. Ginger paste 1 tbsp
3. Garlic paste 1 tbsp
4. Salt to taste
5. Soy sauce 1 tbsp
6. Refined oil 1 tbsp
7. Egg 1 
8. Corn Flour 1 and half tbsp


Mix and marinate all the above ingredients and keep for 2 hours. 

Ingredients for Cooking:


1. Bok Choy 1 big bunch
Wash, separate the stems from leaves. Make big pieces.


2. Garlic paste 1 tsp
3. Salt to taste
4. Refined oil 
5. Aji-no-moto a pinch (opp)
6. Green Chilli to taste, cut lengthwise 


Method: 
Heat oil, fry marinated chicken pieces in two batches. Chicken will be cooked while frying as it was tender after marination. Keep aside.
Heat oil, put in garlic, stir fry for a few seconds and add chicken, aji-no-moto, chilli.
Add the stems of Bok Choy, cover and cook on low flame. Add leaves of Bok Choy when stems are half done. Cover again, cook on low heat. 
Check salt. Bok Choy gets cooked in about 3 to 4 minutes. The Stir Fried Chicken with Bok Choy is ready. 


The left over marinade can be added to the chicken diluting with a little water if you want this dish with little thick gravy.

Chicken with Bok Choy


Bok Choy is one herb I love growing during Winters. Very healthy, tasty and needs no much of care to grow. This particular recipe of Chicken with Bok Choy is a favourite one of my family, delicious!!



Ingredients : 
For Marination

1. 1 and half kg Chicken. Debone the chicken. 
2. 2 Eggs
3. 4 tbsp Corn flour
4. 1 heaped tbsp Ginger paste
5. 1 heaped tbsp Garlic paste
6. 2 tsp Salt
7. 1 and half tbsp Refined oil
8. 1 and half tbsp Soy sauce

Mix all the above ingredients and leave for 2 hours. 


Ingredients :
For Cooking

1. 1 bunch of Bok Choy. Cut into big pieces, keeping stems and leaves apart.
2. Refined oil for frying and cooking
3. Green Chilly to taste, cut lengthwise 
4. More Salt if needed
5. 1 tsp Garlic paste
6. 1 and half tbsp Corn flour



Method : 

Deep fry the marinated chicken pieces in three batches. 
Heat oil, put in the Garlic paste and Chilly. Stir fry for a minute and add the fried chicken pieces. Stir fry for another minute and add warm water.
Mix Corn flour to cold water and add to the chicken. Cook for a few minutes and check salt, add more if needed. 

Put in the stems of Bok Choy and stir for a minute. Add the leaves and stir/cook for half a minute. Bok Choy Chicken is ready. 





Chicken with Bok Choy is best served with a plate of Fried Rice.



Bok Choy can be replaced by Mustard Greens (Lai Xaak) 


Use exactly same amount and same method

Pork with Bok Choy


Serves 3
Ingredients : to marinate
1. Pork 500 gm, cubed
2. Ginger 1 heaped tbsp, julienned
3. Salt 2 tsp
4. Baah Gaaz (sour preserved, grated Bamboo Shoot) 5 to 6 heaped tbsps
5. Bhoot Jolokiya (Ghost Chilli) 1, cut lengthwise into 4 pieces
    (May add more Bhoot Jolokiya according to taste)

  
Mix the above ingredients well and leave for 2 hours


Ingredients : to cook
1. Oil 2 tbsp
2. Garlic 6 pods, crushed
3. Salt, add some more if required
4. Bok Choy 1 small or half if big

Method : to cook
Heat oil, stir fry garlic for half a minute and add the marinated pork along with marinade. 
Cook covered on medium heat, stirring occasionally till the water evaporates completely. 
Pressure cook this meat now adding 2 to 3 cups water. (18 whistles)
Meantime, take out the layers of Bok Choy and wash. Seperate the white portions from the green ones, cut into big pieces.



Pour the meat out to a wok, reduce if there is more than required water on medium heat. 
Add the white portions of Bok Choy to the pork, stir occasionally. Cook for a minute or two. Now add the green portions. Cook for another minute or so. Make sure Bok Choy is not over cooked.
Tasty Pork with Bok Choy is ready to serve.

Important :  
Do not add the Bok Choy if this curry is cooked much before. In case you need to cook it early and keep, serving later after warming. Then do not add Bok Choy, add only before serving.


Mustard Greens (Lai Xaak) can be a very good substitute of Bok Choy.
